Italian Vegetable Toss

2 medium zucchini, sliced
1 tbsp. chopped fresh basil leaves
2 medium yellow squash, sliced
1/4 tsp. black pepper
10 mushrooms, quartered
2 medium tomatoes, cut in wedges
1/4 cup shredded parmesan cheese
1/2 cup sweet onion, chopped

In 2 1/2 quart casserole combine zucchini, yellow squash, mushrooms, butter,
onion, basil and pepper. Cover with wax paper. Microwave on high power 8 to
10 minutes or until squash is tender crisp, rotating halfway through
cooking. Add tomato wedges and sprinkle with cheese. Microwave on high power
1 to 2 minutes or until cheese melts. Serves 4.
